Ice Cream Cone Cupcakes


Cupcakes baked in ice cream cones and decorated with colorful icing and jelly beans!




Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 tsp vanilla
  • 24 ice cream cones
  • colored icing
  • jelly beans (optional)

Directions:

Preheat your oven to 375 degrees.
In a mixing bowl, add butter and sugar.
Beat together until light and fluffy.
Add eggs, one at a time, and beat together.
In another bowl, whisk together flour, baking powder and salt.
Pour some of the flour mixture into the creamed butter mixture and beat together.
Pour some of the milk into the mixture and beat together.
Continue doing this until you have added all of the flour and milk and beat together.
Add vanilla and stir together.
Fill ice cream cones about 3/4 full with the batter.
Place filled cones into a mini muffin pan.
Bake in the oven for about 18 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and remove cones from pan and place on a wire rack.
Once the cones are just cool enough to handle, using a knife or fork, make a small hole into the bottom of each cone so they won't get soggy.
Once the cones are completely cool, pipe on icing and decorate with jelly beans.
