Soft, cake-like cookies that are great for Valentine's Day or anytime.
Ingredients:
3 cups flour
1/4 cup unsweetened cocoa powder
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
3/4 cup unsalted butter, softened
1 1/3 cups sugar
3 eggs
1 Tbsp milk
1 1/2 tsp vanilla
5 tsp red food coloring
1 cup white chocolate morsels
1 cup powdered sugar
Directions:
In a bowl, add flour, unsweetened cocoa powder, baking powder, baking soda and salt.
Whisk together well and set aside.
In a mixing bowl, beat together unsalted butter and sugar until light and fluffy.
Then add eggs, one at a time, and mix together.
Add milk, vanilla and red food coloring and mix together.
Slowly add in your dry ingredients and mix on low just until combined.
Stir in white chocolate morsels.
Cover with plastic wrap and refrigerate for a couple of hours or until the mixture is firm enough to form into balls.
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a bowl, add powdered sugar.
Form the dough mixture into medium sized balls and roll them in the powdered sugar and then place onto your prepared baking sheet.
Slightly flatten each cookie dough ball.
Bake in the oven for 14 - 15 minutes.
Remove from oven and let the cookies sit on the baking sheet for a few minutes before placing them on a wire rack to cool.
