Breakfast Cookie

This easy breakfast cookie combines oats, applesauce and pumpkin to make a delicious treat.




Ingredients:

  • 1 1/4 cup dried oats (not instant)
  • 1/4 cup Splenda (or other sweetener)
  • 1/4 cup applesauce
  • 1/4 cup pure pumpkin
  • 1 egg white
  • 1/4 cup dried fruits & nuts of choice
  • 1/2 ts cinnamon
  • 1 tbs water if mixer is too dry.

Directions:

Preheat your oven to 350 degrees.
Put your oats in the food processor and pulse till floury consistency. (leave aside)
Coarse chop dried fruit or nuts if necessary.
In a medium bowl, add the oats, sweetener, and cinnamon, mix until well incorporated
Next, add applesauce, pure pumpkin, and egg white and mix.
Lastly, stir in the dried fruit/nuts.
Bake for 10-14 minutes.
Makes 4 big cookies.
