This is a delicious side dish for Holiday meals or anytime. It's quick and easy to throw together.
Ingredients:
3 cups mashed sweet potatoes
1/2 cup sugar
2 beaten eggs
1/4 cup butter, melted
1/2 cup milk
1 1/2 teaspoons vanilla
Topping:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup butter, room temperature
Directions:
Preheat your oven to 350 degrees.
Take a 9 inch square baking dish and spray it with non-stick cooking spray. Set aside.
In a large mixing bowl, add sweet potatoes, sugar, eggs, butter, milk and vanilla.
Mix together until well combined.
Pour into your prepared baking dish.
To make the topping, in another bowl, add brown sugar, flour, pecans and butter.
Mix together well.
Sprinkle the mixture on top of the sweet potatoes.
Bake in the oven for approximately 35 to 40 minutes.
