An easy and delicious vegetable side dish to serve during the holidays or anytime!
Ingredients:
24 ounces frozen, chopped broccoli
6 tablespoons butter
1 1/2 cups cornbread stuffing mix, divided
1 egg, slightly beaten
2, 14.75 ounce cans creamed corn
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon dried minced onions
Directions:
Thaw and drain broccoli. Set aside.
Preheat oven to 350 degrees and spray a 3 quart casserole dish with non-stick cooking spray. Set aside.
In a microwave safe cup or bowl, melt butter in microwave.
Stir in 1 cup of cornbread stuffing mix and set aside.
In another bowl, add egg, creamed corn, salt, pepper and dried minced onions.
Stir together.
Fold in the broccoli and cornbread stuffing mixture.
Pour mixture into your prepared casserole dish.
Sprinkle remaining dry cornbread stuffing mix on top.
Bake in the oven for about 1 hour or until a toothpick inserted in the middle comes out clean.
