This casserole is easy to make and turns out delicious.
Ingredients:
2 tablespoons olive oil
2 boneless chicken breast halves
2 large potatoes, peeled and sliced
1 vidalia onion or sweet onion, diced
black pepper to taste
1 can cream of chicken soup
paprika to taste
Directions:
In a skillet, add the olive oil.
Over medium high heat, brown the chicken.
Remove from skillet and drain on paper towels.
Preheat your oven to 350 degrees.
Take a 1 1/2 quart casserole dish and spray it with non-stick cooking spray.
Evenly spread the sliced potatoes over the bottom of the dish.
Then add the diced onion.
Sprinkle on black pepper.
Next, pour the soup over the top and spread out evenly.
Place the browned chicken breast on top.
Sprinkle on the paprika.
Cover with foil.
Bake in the oven for 1 hour or until done.
