Rotini Skillet Dinner


Great recipe for when you are rushed for time and need a fast, delicious meal!




Ingredients:

  • 2 cups cooked rotini pasta
  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 bag of frozen vegetable mix (any kind is fine)
  • 1 can of kidney beans, drained and rinsed
  • 1 tablespoon Italian seasoning
  • shredded parmesan cheese

Directions:

Cook enough rotini pasta, according to package directions, to make 2 cups.
Drain the rotini and set it aside.
In a large skillet, brown ground beef and drain off excess liquid.
Then add diced tomatoes, frozen vegetable mix, kidney beans, rotini and Italian seasoning.
Stir well and then simmer for about 10 minutes.
Top with shredded parmesan cheese.
