Oatmeal Cake


A moist and flavorful cake that is great for get togethers.




Ingredients:

    Cake:

  • 1 cup uncooked, rolled oats (regular or quick)
  • 1 1/4 cups boiling water
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

  • Topping:

  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 6 tablespoons milk
  • 2 cups sweetened, flaked coconut

Directions:

Preheat your oven to 350 degrees.
Take a 9 x 13 baking pan or dish and butter it well. Set aside.
Pour uncooked, rolled oats into a small bowl.
Pour boiling water over the oats and let it sit for 20 minutes.
In a mixing bowl, add butter and sugar.
Beat together until it is light and fluffy.
Then beat in eggs, one at a time.
Next, add vanilla and beat together.
In another bowl, add flour, baking soda, salt and cinnamon.
Stir together until well combined.
Fold your soaked oats into the butter mixture.
Next, fold in your flour mixture.
Pour the mixture into your prepared pan or dish.
Bake in the oven for 25 - 30 minutes or until a toothpick inserted in the center comes out clean.
While the cake is baking, you can make the topping.
In a bowl, add the brown sugar, butter and milk.
Stir together until well combined.
Fold in the sweetened, flaked coconut.
When your cake is done, remove from the oven and spread on the topping.
Put the cake back in the oven and broil it until it is bubbly and light golden brown. Be sure to keep your eye on it so it does not burn.
