An easy and inexpensive meal using ingredients you probably already have on hand.
Ingredients:
1 1/2 lbs ground beef
1 onion, chopped
3 large potatoes, peeled and cubed
1 lb baby carrots
1, 14 1/2 oz can green beans, drained
1, 15 1/4 oz can corn, drained
1, 10 3/4 oz can tomato soup
1, 10 3/4 oz can water
Directions:
In a skillet over medium heat, brown ground beef and onions. Drain off any excess liquid and set aside.
In a crock pot or slow cooker, add potatoes, carrots, green beans, corn and the browned ground beef and onions.
In a bowl or large measuring cup, add tomato soup and water.
Stir together well and then pour over the top of the ground beef and onions.
Cover and cook on low for 6 - 8 hours or on high for 4 hours.
Salt and pepper to taste.
