Microwave Bread Pudding


Quick, easy and delicious bread pudding!




Ingredients:

  • 4 cups bread cubes
  • 1/2 cup packed light brown sugar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 cups milk
  • 1/4 cup butter
  • 2 large eggs
  • 1 tsp vanilla

Directions:

Cut enough bread into cubes to make 4 cups.
Place the bread cubes into the bottom of a 2 qt microwave safe dish and spread them out evenly. Set aside.
In a bowl, add the light brown sugar, salt and cinnamon.
Stir together until well combined.
Evenly sprinkle this on top of the bread cubes.
In a large microwave safe bowl or cup, add the milk and butter.
Heat in the microwave until the milk is warm and the butter is melted.
In another bowl, beat together eggs.
Quickly whisk the eggs into the milk and butter mixture until well combined. Make sure your milk is not too hot or it can cook your eggs.
Add the vanilla and whisk together well.
Microwave at 70% power or medium-high heat for about 9 to 12 minutes, depending on the power of your microwave.
Remove from microwave and let cool down some before serving.
Sprinkle extra cinnamon on top if you like.
