Mandarin Orange Cake


Light and moist cake that is great for BBQ's and picnics.




Ingredients:

    Cake:

  • 1, 18 ounce box yellow cake mix
  • 1, 15 ounce can mandarin oranges, undrained
  • 4 eggs
  • 1/2 cup oil

  • Topping:

  • 1, 20 ounce can crushed pineapple, drained
  • 1 small box instant vanilla pudding
  • 1, 8 ounce container Cool Whip

Directions:

Preheat your oven to 350 degrees.
Grease and flour a 9x13 baking pan. Set aside.
In a mixing bowl, add yellow cake mix, mandarin oranges, eggs and oil.
Mix together until well combined.
Pour the mixture into your prepared pan.
Bake in the oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and place on a wire rack to cool completely.
To make the topping, in a bowl add drained crushed pineapple and instant vanilla pudding.
Mix together well.
Next, fold in the Cool Whip.
Once the cake is completely cool, spread on the topping.
Store cake in the refrigerator.
