Cauliflower Casserole


This recipe combines cauliflower, sour cream and cheddar cheese to make a delicious casserole.




Ingredients:

  • 4 - 6 cups cauliflower florets
  • 1 cup water
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed Ritz crackers
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/2 tsp salt
  • 1/3 cup grated parmesan cheese

Directions:

In a saucepan, add cauliflower and water.
Cover and bring to a boil.
Reduce heat and cook for about 8 minutes or until the cauliflower is tender.
Remove from heat and drain. Set aside.
Preheat oven to 325 degrees and spray a 1.5 to 2 quart baking dish with non-stick cooking spray.
In a large bowl, add your cooked cauliflower, sour cream, shredded cheddar cheese, crushed Ritz crackers, chopped green pepper, chopped onion and salt.
Stir together well.
Place mixture into prepared baking dish and spread out evenly.
Sprinkle grated parmesan cheese on top.
Bake in oven for 30 minutes or until lightly browned.
