Scalloped Potatoes and Ham


This wonderful comfort food turns out creamy and delicious!




Ingredients:

  • 1/2 cup butter
  • 1/2 cup flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 cups milk
  • 3 cups ham, cooked
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 1/2 cup cheddar cheese, shredded
  • 5 cups potatoes, sliced

Directions:

Preheat your oven to 350 degrees.
Take a 9 x 13 baking dish and spray it with non-stick cooking spray. Set aside.
In a large sauce pan, add butter.
Melt this over low heat.
Then add flour, salt and pepper.
Stir together.
Cook for 1 minute, stirring constantly.
Then remove from heat.
Gradually stir in the milk.
Return it back to the heat and continue cooking until the mixture thickens and becomes bubbly.
Next, add the ham, green pepper, onion and cheddar cheese.
Fold this in.
Place your sliced potatoes into a large bowl.
Pour the mixture over the potatoes.
Gently stir this together to evenly coat the potatoes.
Pour the mixture into your prepared baking dish.
Cover with foil and bake for 30 minutes.
Then uncover it and continue baking for 1 hour.
Remove from oven and let stand for 5 to 10 minutes before serving.
