Delicious soft tacos that have a great mix of flavors!
Ingredients:
1 1/2 lbs boneless, skinless chicken breasts
olive oil (enough to coat skillet)
1/8 cup red wine vinegar
the juice of 1 lime
1 tsp sugar
1/2 tsp salt
1/2 tsp pepper
2 green onions, chopped
2 cloves garlic, minced
1 tsp dried oregano
Optional toppings:
lettuce
tomatoes
shredded cheese
salsa
sour cream
Directions:
Cut chicken into cubes.
Take a skillet and add enough olive oil to coat the bottom.
Heat skillet over medium-high heat and then add the chicken.
Sauté for about 10 minutes.
Add red wine vinegar, juice of lime, sugar, salt, pepper, chopped green onions, minced garlic and oregano.
Let this simmer for an additional 10 minutes.
Serve on warm tortillas and top with lettuce, tomatoes, shredded cheese, salsa and sour cream.
