Marshmallow Sauce


A delicious topping for ice cream or dip for fresh fruit.




Ingredients:

  • 1 tsp unflavored powdered gelatin
  • 1 cup cold water, divided
  • 1 1/2 cups sugar
  • 1 cup light corn syrup
  • pinch of salt
  • 1 tsp vanilla extract

Directions:

In a mixing bowl with a whisk attachment, add the gelatin and 1/2 cup cold water and beat together.
In a saucepan, add sugar, corn syrup, salt and remaining 1/2 cup cold water.
Using a candy thermometer, bring this to a boil.
Continue cooking, without stirring, until the temperature reaches 240 degrees.
Then remove from heat and pour the syrup over the gelatin mixture.
Then add vanilla extract.
Beat on low speed for about 2 minutes.
Then increase the speed to high and beat until the mixture becomes thick, white and shiny.
Pour into a glass container and cover with a lid.
Store this in the refrigerator.
