Valentine Mini Brownies


These are chocolate, chewy brownies topped with marshmallow and decorated for Valentine's Day.




Ingredients:

  • 1 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 2/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 12 regular size marshmallows
  • pink and/or red icing
  • Valentine candy hearts

Directions:

Preheat your oven to 350 degrees.
Spray a mini muffin pan really well with non-stick cooking spray. Set aside.
In a large bowl, add sugar, unsweetened cocoa powder and melted butter.
Stir together until combined.
Then add eggs and vanilla.
Stir together.
Next, add flour, baking powder and salt.
Stir together until combined.
Using a small scoop or spoon, fill the mini muffin pan about 3/4 of the way full with the brownie mixture.
Bake in the oven for 15 minutes.
While the brownies are baking, cut marshmallows in half. Set aside.
After your brownies are done baking, remove them from the oven and let them cool on a wire rack for a couple of minutes.
Then take a marshmallow half and gently press it, cut side down, into the center of each brownie.
Place a sheet of parchment paper, wax paper or even some paper towels under a wire rack.
Once the brownies have cooled completely, remove them from the pan and place them on the wire rack.
You may need to run a knife around the edge of the brownie to loosen them from the pan.
Drizzle each brownie with some pink or red icing and top with a Valentine candy heart.
