Red Velvet Cupcakes with Cream Cheese Frosting


Homemade red velvet cupakes with delicious cream cheese frosting. Great for Valentine's Day or anytime!




Ingredients:

    Cupcakes:

  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1/2 cup unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ounces water
  • 1 cup buttermilk
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • red food coloring

  • Cream Cheese Frosting:

  • 1, 8 ounce package cream cheese, at room temperature
  • 1/2 cup unsalted butter, at room temperature
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • sprinkles for decorating (optional)

Directions:

Preheat your oven to 350 degrees.
Take a muffin pan and spray it with non-stick cooking spray or line with baking cups. Set aside.
In a bowl, add flour, salt and cocoa powder.
Mix together and then set aside.
In a mixing bowl, add unsalted butter and sugar.
Beat together until the mixture is light and fluffy.
Then add eggs, vanilla and water.
Mix together well.
Then pour in half of the flour mixture and mix together.
Then add half of the buttermilk and mix together.
Repeat... pour in remaining flour mixture and mix.
Add remaining buttermilk and mix.
In a small bowl, add white vinegar and baking soda.
Stir together.
Using a spoon, fold this into the batter.
Fold in red food coloring until it reaches the shade of red you like.
Evenly spoon the batter into the baking cups.
Bake in the oven for 15 to 20 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and place on a wire rack to cool completely.
To make the frosting, in a mixing bowl, add cream cheese, butter, powdered sugar and vanilla.
Beat until it is smooth and creamy.
Once the cupcakes are cool, frost them and decorate however you like.
