Blueberry Snack Cake
Ingredients:
Batter
- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 cup milk
- 1/3 cup butter, melted
- 1 teaspoon vanilla
Topping
- 2 cups fresh blueberries
- 1/3 cup sugar
Directions:
- Preheat oven to 350 degrees.
- Spray an 8 x 8 baking pan with non-stick cooking spray. Set aside.
- Clean 2 cups of fresh blueberries. Set aside.
- To make the batter, in a bowl add flour, sugar, salt and baking powder. Stir together.
- Add milk, butter and vanilla.
- Stir until well combined.
- Place into prepared pan.
- To make the topping, in another bowl add blueberries and sugar. Stir together.
- Place evenly on top of batter.
- Bake in the oven for 45 - 50 minutes or until a toothpick inserted in the center comes out clean.
