Tortellini Soup |
Ingredients 1 Tbsp olive oil 8 oz chopped carrots 1 cup chopped celery 1 medium onion, chopped 4 cups chicken stock 24 oz spaghetti sauce 1, 14.5 oz can diced tomatoes 1 tsp sugar 1/4 tsp black pepper 1 1/2 tsp Italian seasoning 8 oz dried, cheese filled tortellini Directions In a large pot, add olive oil, carrots, celery, and onion. Saute until onions are translucent. Then add chicken stock, spaghetti sauce, diced tomatoes, sugar, black pepper and Italian seasoning. Stir together well. Simmer for 15 - 20 minutes or until your vegetables are tender. Add tortellini and stir. Cook for an additional 15 minutes or until the tortellini is tender. |
