Oven Roasted Potato Wedges

Ingredients
6 - 8 large potatoes
2 teaspoons minced garlic
1/2 cup olive oil
1 cup water
1 tablespoon dried oregano
juice of 1 lemon
salt and pepper to taste


Directions
Preheat oven to 400 degrees.
Line a baking sheet with either parchment paper or non-stick aluminum foil.
Peel potatoes and cut into large wedges. Cut enough to cover the bottom of your baking sheet.
Place potato wedges onto prepared baking sheet.
Add minced garlic, olive oil, water, dried oregano, juice of lemon, salt and pepper.
Using clean hands, toss everything together so the potato wedges are evenly coated.
Spread potato wedges out into a single layer.
Bake in oven for 40 - 45 minutes.
Remove from oven and turn the potatoes.
If you like, you may add a little more oregano, salt and pepper.
Place back into the oven for an additional 40 - 45 minutes or until the wedges are golden brown.
