Caramelized Butternut Squash

Ingredients
2 to 3 medium sized butternut squash, peeled and cubed
8 tablespoons unsalted butter
1/4 cup light brown sugar, packed
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper


Directions
Preheat your oven to 400 degrees.
Cut off the ends of the butternut squash.
Cut squash in half.
Cut the bottom piece in half and scoop out the seeds.
Peel the squash using a peeler or paring knife.
Cut the squash into 1 1/2 inch cubes and place onto a baking sheet.
Melt the unsalted butter pour over the cubes of squash.
Sprinkle light brown sugar, kosher salt and black pepper evenly over the squash.
Toss the mixture together to evenly coat.
Spread the mixture out into a single layer.
Roast in the oven for about 45 to 55 minutes or until the squash is tender and the sauce caramelizes.
While the squash is roasting, turn it a few times with a spatula to brown evenly.
