Lime Jello Salad

Ingredients
2 packages lime Jello
1 2/3 cup water
1/3 cup of reserved pineapple juice
1 tsp. salt
1 cup Miracle Whip
1 cup cottage cheese
1 cup crushed pineapple

Directions
Drain pineapples and reserve juice.
In saucepan, add lime jello to 2 cups of liquid (1 2/3 cup water and 1/3 cup pineapple juice).
Add 1 tsp. salt
Stir often to dissolve jello on med. heat till it just barely starts to boil.
Remove from heat.
Pour into large bowl and cool on counter till luke warm then refrigerate till just starting to set up. (don't let it harden up though..) If you touch the top it should still be soft and leave a finger dent.
Remove from fridge and add mayo and stir well to mix through, then add pineapple and cottage cheese and continue to stir until well combined.
Refrigerate until completely set.
Serve as a salad/side dish. Great for BBQ take along dishes for potlucks.
