Chicken Pot Pie |
Ingredients 1 cup chicken broth 1/2 cup half and half 2 1/2 tablespoons butter 1/2 cup diced onions 1/2 cup diced celery 1/2 cup diced carrots 1/2 cup diced potatoes 1/4 cup all purpose flour 1/2 teaspoon salt 1/8 teaspoon pepper 2 cups cooked chicken, chopped 2 pie crusts Directions Preheat your oven to 400 degrees. In a large measuring cup, add chicken broth and half and half. Mix this together and then set aside. In a pan, add the butter and then melt. Then add onions, celery, carrots and potatoes. Sauté this for about 10 minutes. Next, add flour and cook for an additional minute or so, stirring constantly. Gradually stir in your chicken broth and half and half mixture. Continue cooking and stirring until the mixture thickens. Then add salt and pepper and stir together. Next, add the chicken and stir together well. Remove the pan from heat. Line a pie plate with a pie crust. Pour in your mixture. Top this with another pie crust and seal the edges together. Next, cut slits into the top crust. Now bake in the oven for about 25 - 35 minutes or until the crust is nicely browned. If while baking, the crust edge starts to get dark, cover with aluminum foil. Tips: Recipe can easily be doubled. It is also great made with turkey. |
