Chicken and Vegetable Casserole |
Ingredients 40 ounces frozen mixed vegetables 1 1/2 cups diced, cooked chicken 1 cup chopped sweet onion 1 cup chopped celery 1 cup shredded cheddar cheese 1 cup mayonnaise 1 1/2 cups crumbled Ritz crackers 1/4 to 1/2 cup melted butter Directions Cook frozen mixed vegetables according to package directions and then drain. Preheat your oven to 350 degrees. Take a 9 x 13 baking dish and spray it with non-stick cooking spray. Pour your cooked vegetables into a large bowl and then add cooked chicken, sweet onion, celery, cheddar cheese and mayonnaise. Stir together until well combined. Pour the mixture into your prepared baking dish. In another bowl, add crumbled Ritz crackers and melted butter. Stir together well. Sprinkle cracker mixture over the casserole. Bake in the oven for about 30 minutes. |
