Bourbon Chicken

Ingredients
2 lbs boneless, skinless chicken thighs (or breasts)
1 - 2 tablespoons olive oil
2 garlic cloves, chopped
1/2 teaspoon ginger
1/2 teaspoon crushed red pepper flakes
1/2 cup apple juice
2/3 cup light brown sugar
1/4 cup ketchup
1 cup water
2/3 cup low sodium soy sauce
1 tablespoon cornstarch
1 tablespoon water





Directions
Cut chicken into bite-sized pieces.
In a large skillet, add the olive oil and heat.
Once the oil is hot, add the chicken pieces.
Cook until lightly browned.
Remove chicken.
Then add garlic, ginger, red pepper flakes, apple juice, light brown sugar, ketchup, water and soy sauce.
Heat this over medium heat until the ingredients are dissolved and mixed together well.
Now bring the mixture to a boil.
Reduce the heat and simmer for about 20 minutes.
During the last 10 minutes, add your chicken and continue simmering for the remaining 10 minutes.
In a small bowl, add cornstarch and water and whisk together.
During about the last minute of simmering, add this and stir well to thicken the sauce.
Serve over rice.
