Toffee Pecan Pie

Ingredients
1 1/3 cups chopped pecans
1/4 cup butter
1/2 cup sugar
3 large eggs
1 cup light corn syrup
1 store-bought or homemade pie crust to line a 9 inch pie plate
3/4 cup toffee bits


Directions
Preheat oven to 350 degrees.
Roughly chop 1 1/3 cups pecans
Place pecans on baking sheet and bake in oven for 8 - 10 minutes, stirring/flipping halfway through, until they are lightly toasted.
Remove from oven and set aside.
In a mixing bowl, beat together butter and sugar until fluffy.
Add 3 eggs, 1 at a time, and beat well after each one.
Add light corn syrup and beat well.
Sprinkle some flour into the bottom of a 9 inch pie plate and then line it with either a store bought or homemade pie crust.
Sprinkle some flour onto the pie crust and then pour in the mixture.
In another bowl, stir together toasted pecans and toffee bits.
Sprinkle over the pie.
To prevent the edges of the pie shell from getting too dark, you can place aluminum foil around the edge.
If the crust is not getting dark enough for you, you can remove the foil during the last 10 - 15 minutes of baking.
Bake in the oven at 350 degrees for about 40 minutes or until the filling sets up.
Remove from oven and let it cool on a wire rack.
You may add extra pecans or toffee bits on top to garnish.
