This is a really easy recipe that combines pumpkin, evaporated milk, sugar and spices, with a yellow cake mix sprinkled on top. It makes a really yummy dessert for Thanksgiving or anytime.
Ingredients:
1 cup chopped pecans
1, 15 ounce can pure pumpkin
10 ounces evaporated milk
1/2 cup granulated sugar
1/2 cup brown sugar
3 large eggs
3 teaspoons pumpkin pie spice
1 box yellow cake mix
1 cup butter, melted
caramel ice cream topping (optional)
ice cream (optional)
Directions:
Preheat your oven to 350 degrees.
Take a 9 x 13 baking pan and spray it with non-stick cooking spray. Set aside.
Chop enough pecans to make 1 cup. Set aside.
In a bowl, add pure pumpkin, evaporated milk, granulated sugar, brown sugar, eggs and pumpkin pie spice.
Stir together until well combined.
Pour the mixture into your prepared pan.
Evenly sprinkle your yellow cake mix over the top of the mixture.
Then evenly sprinkle on your chopped pecans.
Evenly pour on your melted butter.
Bake in the oven for 45 minutes or until the center sets up.
Remove from oven and place on a wire rack.
Once it is cooled down some, you can drizzle on some caramel ice cream topping if you like.
This is best served warm.
Be sure to store this in the refrigerator.
Make sure you reheat this before serving.
