Pumpkin Cookies

Ingredients
1 cup butter, room temperature
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 cup canned pumpkin
1 egg
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
cream cheese frosting
sprinkles for decorating (optional)


Directions
Preheat your oven to 350 degrees.
In a large bowl, add butter, sugar and brown sugar.
Cream this together.
Then add the canned pumpkin, egg and vanilla extract.
Mix this together until well combined.
In another bowl, add flour, baking soda, baking powder, cinnamon and salt.
Stir together well.
Add the flour mixture to the butter sugar mixture and mix together well.
Drop the mixture by tablespoonfuls onto ungreased cookie sheets.
Place cookies about 3 inches apart.
Bake in the oven for 10 to 12 minutes or until the edges of the cookies are golden brown.
Remove from oven and place on wire racks to cool.
Once cookies are completely cool, top with cream cheese frosting and decorate with sprinkles.
