Pumpkin Bars with Maple Icing |
Ingredients 1 cup chopped walnuts 1 1/2 cups flour 1 1/2 teaspoons pumpkin pie spice 1/2 teaspoon salt 1/4 teaspoon baking soda 1 cup butter, softened 1 cup sugar 1, 14 ounce can sweetened condensed milk, divided 1 cup pure pumpkin 1 egg 1 1/2 cups white chocolate chips 2 tablespoons butter 1/2 teaspoon maple extract Directions Chop enough walnuts to make 1 cup and set aside. Preheat your oven to 350 degrees and spray a 13x9 baking pan with non-stick cooking spray. Set aside. In a bowl, add flour, pumpkin pie spice, salt and baking soda. Whisk this together and then set aside. In a mixing bowl, cream together butter and sugar. Then add, 1/2 cup of the sweetened condensed milk, pure pumpkin and egg. Mix this together. Gradually mix in your flour mixture. Next, add your chopped walnuts and stir together. Place this into your prepared pan. Bake in the oven for about 35 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and place on a wire rack to cool completely. To make the icing, in a microwave safe cup or bowl add your remaining sweetened condensed milk, white chocolate chips and butter. Melt in the microwave, in 20 - 30 second intervals, stirring each time, until the mixture is melted. Be careful not to burn it. Then add the maple extract and stir together until well combined. Evenly spread this over the top of your bars. Chill in the refrigerator for about 1 hour or until the icing sets up. Cut into bars to serve. |
