Grandma's Apple Cake

Ingredients
FOR CAKE BATTER:
2 eggs
1 cup white sugar
1 tsp. vanilla extract
1/2 cup vegetable oil
3 tbs. water
1 1/2 cup all-purpose flour
2 tsp. baking powder
1 tsp. salt

FOR APPLES:
4-6 apples peeled, cored and cut into thin slices
1/2 cup brown sugar
1 tsp. ground cinnamon

Icing sugar to garnish

Directions
Preheat oven to 350 (F).
Mix together the eggs, white sugar, vanilla, oil and water.
In a separate bowl mix the flour, baking powder and salt.
Mix the dry ingredients into the wet. You will end up with a thick cake batter.
Mix together the apples, cinnamon and brown sugar in a bowl.
Spoon half of the cake batter into a greased, standard size bread pan, and top with the apple mixture.
Pour the remaining batter and top with the remaining apple slices.
Bake for 1 hour.
Cool and sprinkle with icing sugar.
