Chocolate Cherry Cookies

Ingredients
1 cup shortening
1 1/2 cups white sugar
2 large eggs
1 teaspoon almond extract
2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup semi sweet chocolate chips
1 1/2 cups coconut
1 1/2 cups chopped maraschino cherries


Directions
Preheat your oven to 350 degrees.
Take a cookie sheet and spray it with non-stick cooking spray. Set aside.
In a mixing bowl, add the shortening and sugar.
Beat together until well blended.
Then add the eggs and almond extract.
Beat together on medium speed until it is light and fluffy.
In another bowl, add the flour, baking powder and salt.
Stir together well.
Gradually pour this into your egg mixture, beating on low just until blended.
Next, fold in the semi sweet chocolate chips, coconut and maraschino cherries.
Now drop by spoonfuls onto your prepared cookie sheet.
Then bake in the oven for about 15 minutes or until the edges are lightly browned.
