Apple Butterscotch Bars

Ingredients
2 cups sugar
2 eggs
3/4 cup vegetable oil
1 teaspoon vanilla
2 1/2 cups self-rising flour
1 teaspoon cinnamon
3 cups of peeled and diced apples
3/4 cup butterscotch morsels
1 cup chopped pecans


Directions
Preheat oven to 350 degrees.
Spray a 9x13 baking pan with non-stick cooking spray.
In a large bowl, mix together sugar, eggs, oil and vanilla.
Then stir in flour and cinnamon. Mixture will be very thick.
Peel and dice enough apples to make 3 cups. Add apples to mixture.
Add butterscotch chips and stir well.
Spread mixture into prepared pan.
Chop enough pecans to make 1 cup.
Sprinkle pecans on top of batter and lightly press them down.
Bake in oven for 40 - 50 minutes.
Remove from oven and let cool completely before cutting into bars.
