Apple Pie Muffins

Ingredients
Topping:
1/2 cup firmly packed brown sugar
1/3 cup all-purpose flour
1/4 cup unsalted butter, melted
1 teaspoon cinnamon

Muffins
1 1/2 cups firmly packed brown sugar
2/3 cup vegetable oil
1 egg
1 1/2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup buttermilk
2 cups diced peeled tart apples


Directions
Preheat your oven to 350 degrees.
Take a muffin pan and grease the muffin cups. Set aside.

Topping:
In a bowl, add the brown sugar, flour, melted butter and cinnamon.
Mix together well and then set aside.

Muffins:
In another bowl, add the brown sugar, oil, egg and vanilla.
Mix together until well combined.
In another bowl, sift together the flour, baking soda, cinnamon and salt.
Pour the egg mixture into the sifted flour mixture.
Stir together well.
Add the buttermilk.
Stir together well.
Fold in the apples.
Evenly spoon the mixture into the muffin pan filling 3/4 full.
Next, evenly sprinkle on the topping.
Bake in the oven for 25 to 30 minutes or until golden brown.
