Delicious, fluffy pancakes flavored with pumpkin and spices!
1 1/4 cups flour
2 Tbsp sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1 1/4 cups milk
1/2 cup canned pumpkin
2 Tbsp melted butter
In a bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, and salt. Set aside.
In another bowl, whisk together milk, pumpkin, melted butter and egg.
Fold your dry ingredients into the wet ingredients.
Over medium heat, spray a skillet or griddle with non-stick cooking spray.
Pour some batter on the heated skillet or griddle to make the size of pancakes you like.
Cook until golden brown on both sides.
These are great served with maple syrup.
